I don’t know why these were never introduced to me in college. As I was looking for a quick lunch recipe I came across TORTILLA PIZZAS. The name speaks for itself. I literally threw some pizza sauce and mozzarella cheese on a whole wheat tortilla, added some peppers and onions and BAM. It was in my stomach before I knew it. I found this recipe here and it turned out perfect the first time. I didn’t have a cast iron skillet, but I used a pan that had holes in it and it cooked just fine at 425 degrees. I will most definitely be making these pizzas on a weekly basis. The cheese won’t do me any good but at least they’re made on whole wheat tortillas! That counts for something, right?
